The chickling pea is native to the Middle East and a cornerstone of rural Italian diets long before 'modern' legumes like chickpeas and beans became widespread. Protein-rich and calorie-dense, it requires long, patient cooking and was traditionally transformed into a smooth, velvety purée.

In this recipe, the chickling pea purée meets escarole, a slightly bitter winter chicory, softened by a rich sauté of tomato, spring onion, olives, capers, pine nuts, and Parmesan cheese. A naturally fibre-rich dish.

Preparation

Add boiling water directly into the pouch. The label shows the quantity and the corresponding level to follow inside the pouch. Once the water has been poured, stir carefully paying attention to the corners so that all the product absorbs the water. Close the zip and wait 10 minutes.Your meal is ready.
