RICE AND PEAS

Rice and peas is a spring dish from Veneto,  historically prepared on the day dedicated to St. Mark. It is a spring recipe because its main ingredient is “bisi”, or peas. Rice is cooked in a sauté of spring onions, with vegetable broth. The consistency of the result is quite unique: more liquid than a traditional risotto, but not as much as a soup.
