MASHED CHICKLING PEAS AND ESCAROLE
Native to the Middle East, chickling peas are rich in protein and calories, and typical of ancient peasant diets. Chickling peas should be cooked for a long time, and made into a puree. Then escarole is added, a bitter winter salad, cooked together with a mix of tomato, spring onion, olives, capers, pine nuts and Parmesan cheese.
